How to choose an instance without knowing anything about any instance? Which to trust and which is the most interactive?

On this page you'll get a quick description of several instances :

When you find one you are interested in, add "/about/more" at the end of its URL and you will get a page where (sometimes) the policy of the server is explained by its admin.
Then, just create an account on the instance and explore the "local" tab (it is the one displaying the toots from this server only) and you'll get a quick idea of the atmosphere !
