@Starling It's remarkably easy and it freezes well which is why I do it in the smaller tins rather than one big tin. I do it in half pound tins too, just reduce the cooking time a little if you do that.

@tisch @Starling interesting- that recipe looks pretty close to what a ‘real’ fruitcake should be- just need some alcohol in it I think? 😉

It's not far off, the dates go into a mush and with the malt it makes it kind of sticky and gooey. I'll try adding some brandy next time that's a good idea.
