Green apple bell pepper kidney bean salad is my new favourite thing.
@_paulhg_ Nope, the apples are raw (and sour). Only the onions are fried, also the pepper for a minute or so.
I would have added some parsley if I had any...
@encarsia looks good I will have to give it a shot!
@_paulhg_ I added a bit (= no liquid accumulating at the bottom of the bowl) of red balsamic vinegar and olive oil as dressing.
If I were some creative foodie I'd probably think of enhancing this with feta cheese or pine nuts or other fancy ingredients...but I'm not 😅
@encarsia do you cook the apples in any way!?
