It got a little puffier and stronger from the rest/stretch cycles. Whew! Gonna shove it in the oven with the light on to rise.

covered it up after a brief knead. was crazy sticky, so I went into"hurry up" mode to knead. Otherwise my hands would go goooooy and I'd be all 😣

kinda slimy so I guess I'll be adding more flour in until it becomes dough.

so just jamming every thing in there. I ran out of bread flour, so it's the all purpose stuff for now, plus a little rye.

I have burned bread before, which is demoralizing. So when it gets to an internal 200F or more, I yank it out, even if it doesn't have that dark red crust.
