I tried some Malt-o-Meal as 1/4 of the flour in a batch, but messed up at the end by accidentally deflating the whole loaf through sticky Saran Wrap 😑
I baked it anyway, and the crumb was normal [!]. Hot, it had a strong barley presence. While other "test subjects" seemed to enjoy it, I can't understand why, for me, it tasted bland.
I *will* try this again though. Maybe throw some rye in it and use a non-stupid baking process.
