This is #sourdough hooch mixed with Malta Goya. I scooped off the head after the picture was taken. The idea is that the Goya probably has all the nutrients to ferment beer. We'll see!
@Troll Hm. I am kinda worried about bacteria. Sourdough pretty much kicks any bacteria's ass as it grows, but this kind of fermentation might make it more vulnerable? 🤔
@upside Lacto is kind of a bully. And if there's any Brett present it will digest any and all sugar available. So it make work out fine.
@upside Ideally you'd boil that mix to kill off anything unwanted. But that would mean adding a proper yeast after the fact. I'm curious though how it turns out as is.
