There is a *massive* list of instances over at instances.social/list that has really good info on what communities are here on Mastodon.

There's even a tool to peer into the public timeline of an instance at unmung.com/mastoview

These two tools are *great* for discovering mastodon communities that are smaller and/or topic focused and/or closer to home.
