roast a bunch of sweet potatoes in the oven till very soft

pull off the skins and mash.

put in blender:

2 cups smashed sweet potato
1 can evaporated milk (~350 ml)
3/4 cups sugar or less
1/4 tsp salt
scant tsp ginger
full tsp cinnamon
2 eggs

blend very smooth

pour in pie dish with pie crust or just greased dish if no crust

bake @ 425 for 15 minutes then @ 350 until top poofs up and toothpick in center comes out clean (~35 min)
