blegh! I bought a gluten free pancake mix made with fonio flour and it has so much baking powder that I can't even taste anything else.
I've noticed some commercial bakeries do this as well and ruin their pastries. baking soda tastes terrible. don't use too much. I'd rather flat pancakes than this metal-acrid-almost-salt flavor
Oops I meant baking powder. I'm gonna try to salvage the rest of the batch by asking a little baking soda to neutralize it.
I have to take partial responsibility for this. I KNOW that baking powder requires a little soda to neutralize it if you're using something acidic like buttermilk. But it's a pancake mix! How can you make a pancake mix that fails when you use buttermilk!?!
So this was my first time eating fonio. it's not bad, but not great either. it reminds me a bit of crickets actually. I think it would be better in a savory nutbread with lots of spices than in pancakes.
