I managed to make a vegan "broccoli cheddar" soup last night that was dead simple, tasty, and only 141 calories a bowl. Pretty good calories for "broccoli cheddar" soup, and close enough to the main thing for vegan.
The key things:
- equal parts cauliflower and brocooli which you cook to death. When you blend it, it's the cauliflower that gives it the creamy taste mostly.
- a light miso
- lots of nutritional yeast
- cashew milk
The electric pressure cooker and frozen veggies make it easy
