@hfrazey I just put two filled loaves in the oven. For dinner, bread filled with sauteed onion, jalapeno, and cheddar cheese; the other loaf is filled with nuts and dried fruit, and is for breakfast.
@stylus Ooh! Do you have a bread recipe you use/can share? That sounds delicious. After dinner I'm going to bake some cranberry maple pecan breakfast cake from a new cookbook I got.
When I'm making a filled loaf, I combine 2 cups of whatever fillings sound good (but it should be fairly dry stuff, not 2 cups of tomato sauce!).
Roll out half of the dough to about 16x10", spread the filling evenly. Roll it up, fold the ends under, and put in the greased loaf pan for the second rising.
@hfrazey In this particular case, I finely chopped 3 medium onions, then cooked them in cast iron. Near the end, I added one finely cut jalapeno. I put all that, plus a cup or so of shredded cheese, in the loaf.
