I really wanted an Instant Pot, and, now that I got one, I'm realizing how much is recipe based. I'm not a recipe kind of person. I'm constantly tweaking, and a sealed pressure cooker doesn't facilitate that.

@advicepig I don’t use recipes, and still find the IPot very useful. I guess the tweaking is just split into Before and After.

@clew Sounds reasonable. I'm just so used to foraging in the cupboards and making stuff up from a whim, but I need to have some fundamentals for the i p to do that.

@advicepig Yeah, took me a while even though I used pressure cookers a lot beforehand, come to think of it. Although opening the automatic one mid- pressure and restarting it is even easier.

I worry that if I ever cook with a stovetop pressure cooker again I will have lost the survival instinct to always have an ear on it.

@clew I rely on looking at things and poking them to cook, i p doesn't lend itself to my micromanaging 😹

@advicepig you personally disprove the Watched Pot Hypothesis? This will be different!

Or, of course, just Not Your Thing. Or you could get into steamed second courses to cook while you’re poking. All those custard and bag-pudding and wrapped-in-a-leaf classics.
