Mine was even simpler, well chopped collards (remove stems), chopped pickled jalapenos, start frying the collards in a little olive oil then add the jalapeno. When the collards are a little wilted (2-3 minutes), add 1/2 cup water and continue another 3-5 minutes. You could add garlic and I really want to try the ginger version above.
